Abstract

Tujuan penelitian ini adalah untuk menganalisis karakteristik fisik, kimia dan sensoris mi tepung beras merah. Penelitian ini dilaksanakan di laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya, dan laboratorium Saraswanti Indo Genetech, Institut Pertanian Bogor, pada bulan Juli 2010 sampai dengan November 2010. Penelitian ini menggunakan Rancangan Acak Lengkap Non Faktorial dengan faktor perlakuan tunggal dan setiap perlakuan diulang sebanyak 3 kali. Perlakuan adalah penambahan tepung beras merah dengan konsentrasi Ao (kontrol), Ai (10% tepung beras merah), A2 (20% tepung beras merah), A3 (30% tepung beras merah), A4 (40% tepung beras merah), dan A5 (50% tepung beras merah). Parameter yang diamati pada penelitian ini yaitu karakteristik fisik (tekstur, warna dan elongasi), karakteristik kimia (kadar air, kadar abu, kadar serat kasar, kadar protein, Analisa vitamin Bi (Tiamin), dan karakteristik sensoris dengan uji hedonik (warna, aroma, rasa dan tekstur). Hasil penelitian menunjukkan bahwa konsentrasi penambahan tepung beras merah berpengaruh nyata terhadap nilai tekstur, warna (ligthness, chroma, hue), elongasi, kadar air, kadar abu. Mi basah tepung beras merah dengan perlakuan A2 (20% tepung beras merah) merupakan perlakuan terbaik berdasarkan uji sensoris dengan tekstur 70,39 gf, warna (lightness 62,78%, chroma 18,03% dan hue 74,07°), persen perpanjangan (elongasi) 16,67%, kadar air 30,96%, kadar abu 2,96%, kadar serat kasar 4,21%, kadar protein 6,31% dan analisis thiamin 0,34 mg. Sensoris menunjukkan bahwa mi dengan penambahan tepung beras merah 20% (A2) memiliki skor rata-rata kesukaan terhadap aroma 3,04, rasa 3,20 warna 3,36 dan tekstur 3,20.
