Abstract

Minuman yang memiliki higiene sanitasi kurang baik dapat berpotensi terjadinya cemaran biologi sehingga menimbulkan gangguan kesehatan seperti infeksi pada pencernaan. Escherichia coli merupakan jenis mikrobiologis pada makanan. Sesuai dengan Keputusan Menteri Kesehatan bahwa bakteri Escherichia coli pada makanan atau minuman seharusnya 0 per gram. Penelitian ini bertujuan untuk menganalisis higiene sanitasi dan kualitas bakteriologis es dawet ayu Banjarnegara di Kota Palembang. Penelitian ini merupakan jenis penelitian kualitatif menggunakan metode observasi dan wawancara mendalam untuk mendapatkan gambaran dan menganalisis higiene sanitasi dan kualitas bakteriologis es dawet pada tempat pembuatan es dawet ayu Banjarnegara. Informan pada penelitian ini sebanyak 8 orang terdiri dari 1 informan kunci (pemilik es dawet) dan 8 informan biasa (3 penjamah, 4 pembeli). Hasil penelitian higiene sanitasi es dawet ayu Banjarnegara tidak memenuhi dengan standar kesehatan Permenkes No.1096 tahun 2011 pada tahap pengolahan masih belum baik dikarenakan bahan baku seperti daun pandan tidak dicuci dengan air mengalir termasuk perlakuan yang berisiko, pengangkutan wadah di dalam gerobak tidak ditutup dengan rapat, kebersihan diri penjamah yang tidak memakai alat pelindung diri seperti sarung tangan dapat menjadi potensi masuknya Escherichia Coli melalui tangan ke makanan, dan kualitas bakteriologis mengidentifikasi Escherichia Coli pada 5 sampel dawet, air gula merah, santan, es batu, dan es dawet hanya 1 sampel yaitu air gula merah yang negatif atau memenuhi syarat. Disimpulkan higiene sanitasi es dawet ayu Banjarnegara masih rendah karena adanya indikasi kontaminasi bakteriologis. Sehingga, diharapkan kepada pemilik dan penjamah es dawet ayu Banjarnegara memperbaiki proses pengolahan seperti memasak air hingga mendidih, melakukan perlakuan pemanasan santan, dan memperhatikan wadah sekitar gerobak agar tertutup rapat.
