Abstract
This research aimed to determine the physical, chemical, and sensory characteristics of pineapple and lemongrass juice drink as a functional beverage. This research used a Non-Factorial Completely Randomized Design (RAL) with six factors and the treatment was repeated 3 times. The treatment factor include addition of lemongrass juice (25%, 50%, 75%, 100%, 125%, and 150%). The parameters observed included physical characteristic (color include L*, a*, b*), chemical characteristic (total soluble solid, pH, flavonoid, and antioxidant activity), and sensory characteristic (color, aroma and taste). The results showed that the addition of lemongrass juice significantly affected the color (lightness (L*), redness (a*), yellowness (b*)), total soluble solid, pH, antioxidant activity, flavonoid and sensory characteristic (color and taste). Pineapple and lemongrass juice drink with addition 100% lemongrass juice concentration is the best treatment based on sensory characteristics to color 3,08, aroma 2,96, and taste 3,16, chemical characteristics to total soluble solid 15,83oBrix, pH 4,41, and antioxidant activity 67,44 ppm, and physical characteristic to color (L* 40,91, a* 1,96, dan b* 17,65).
