Abstract
The purpose of this study was to determine the ratio of cucumber (Cucumis sativus L.) and water and sugar concentration to the physical and chemical characteristics of the resulting nata de cucumber. This research was carried out from November 2022 to January 2023 at the Chemistry, Processing and Sensory Laboratory of Agricultural Products, Department of Agricultural Technology,Faculty of Agriculture, Sriwijaya University. This study used a Completely Randomized Factorial Design (RALF) with two treatment factors and each treatment was repeated three times. Factor A, namely the ratio of cucumber and water (1:1 and 1:2), and factor B, namely the concentration of sugar (2% (w/v), 4% (w/v), and 6% (w/v)). The data obtained were processed using analysis of variance (ANOVA), the treatments that had a significant effect were further tested using the 5% Honest Significant Difference (BNJ) test. The results showed that treatment A (ratio of cucumber and water) had a significant effect on hardness and moisture content, while treatment B (concentration of sugar) had a significant effect on yield, thickness, hardness, water content and total sugar. The interaction of the two treatment factors has a significant effect on violence. The best treatment was A2B3 (ratio of cucumber and water 1:2 ; sugar concentration 6%) with a yield value of 67.10%, thickness 1.57 cm, hardness 374.70 gf, water content 91.70%, total sugar 9.0% and C/N ratio 25.13.
