Abstract
In general, the kemplang roasting tool used is charcoal-fueled or gas-fueled which utilizes the heat source of the fuel. This roasting tool is made with the presence of a fuel storage room which is given air intake manually and uses a fan to accelerate the burning of kemplang products. The operation of this tool has many disadvantages, namely combustion air intake cannot be controlled and is not good. Excessive air intake will cause the fuel to run out quickly and less air intake will cause slow burning and the results are sometimes not good. In this traditional roasting process a lot of heat energy is wasted during roasting resulting in low productivity efficiency. By way of flipping kemplang often the occurrence of hanggus or uneven This needs to be done some efforts to repair the roasting using charcoal or gas to increase the yield and quality of the kemplang grill product by one method that is by using a roasting system using electric heating elements which can utilize a radiation energy source. In this traditional roasting process a lot of heat energy is wasted during roasting resulting in low productivity efficiency. By way of flipping kemplang often the occurrence of hanggus or uneven, and the method does not produce a quality product The application of grilling this electric heating element to the quality of the product produced. in this case kemplang needs to be examined further, which includes not yet known the heating element capacity, roasting distance, temperature and roasting time. when produced on the quality of the number of kemplang products in the roasting device consisting of rack shelf capacity of 10 varied weight kemplang products which weighed 99.2 gr and also the lightest 70.1 grams in 10 kemplang products temperature in the heat source space is greater than the outside air, then heat transfer occurs due to the difference in temperature between rooms. The temperature in the grill room is varied from 170 ℃ - 230 ℃ based on temperature which is overheating can damage the kemplang product, this roasting machine uses stainless steel iron material with a thickness of 2 mm while the insulation is by using aluminum foil whose size is 0.5 mm thickness, because the thicker roasting box is made due to high-temperature roasting because and thicker aging expected to last longer
