Abstract

Microcrystalline cellulose (MCC) is an important ingredient in pharmaceutical, food, cosmetic and other industries. A study about optimum condition for production of microcrystalline cellulose from water chestnut has been done. In this work, MCC was prepared from the alpha cellulose content of water chestnut, a renewable natural resource that has no industrial utilization yet. A total of 500 grams of water chestnut powder were made into alpha-cellulose by the method of multistage pulping and variation of hydrochloric acid concentration were 1,5 N, 2,5 N and 3,5 N with variation of hydrolyzing time were 30, 45, and 60 minutes and the temperature were 105oC, were analyzed using Design Expert®10 to produce optimum microcrystalline cellulose. Yield, color, angle of repose and moisture sorption capacity were the responses that used to determine the optimum condition of microcrystalline cellulose production which result hydrochloric acid 1,5 N in 30 minutes as the optimum hydrolysis condition. The yield of optimum microcrystalline cellulose which obtained from optimum condition was 84,55 %. Microcrystalline cellulose from water chestnut based on the characters test, identification, starch test, pH, water soluble substances, loss on drying, bulk density, tap density, angle of repose, Carr’s index and Hausner ratio, hydration capacity and swelling capacity and moisture sorption capacity as well as the characterization using infrared spectroscopy (FTIR), X-ray diffractometer (XRD) are not significantly different from Avicel PH®101. It was concluded that water chestnut MCC compared favorably with the commercial-grade MCC as well as conform to official specifications for MCC in the British Pharmacopoeia.
