Abstract
Portion standards are details of the types and amounts of food ingredients in net weight for each type of dish. This study aims to analyze the appropriateness of the portion weight of chicken meat with standard portions and analysis of the cost accuracy of the weight of chicken meat. This research is a quantitative research with analytic descriptive observational method with a cross-sectional approach. The population in this study used total sampling, namely all chicken meat received based on the menu cycle at the Nutrition Installation of RSUP Dr. Mohammad Hoesin Palembang. Data retrieval was obtained from the results of weighing raw chicken meat using digital scales. The total results of weighing 3 times showed that the weight of chicken meat was included in the appropriate category of 79.6% and the inappropriate category was 20.4%. The total cost of chicken meat that should be spent on one kilogram of chicken meat is Rp. 43.825,-/kg based on the percentage of accuracy of chicken meat with a standard portion.
