Abstract
MUHAMMAD ALHADI BIMO SUSENO, Edible Starch-Based Film from Lotus Seeds (Nelumbo nucifera) with addition of Zinc Oxcide (ZnO-NP) and Glycerol as Strengthening Agents (Supervised by SHERLY RIDHOWATI N.I.). This study aimed to analyze the functional properties of packaging films based on lotus seed starch (Nelumbo nucifera) with the addition of ZnO-NP and Glycerol. The research method used was a laboratory experimental method designed with 3 treatment levels with 2 repetitions. The data obtained was processed using a descriptive test. Parameters observed included 6 tests namely Water Absorption, Water Vapor Transmission Rate (WVTR), Colour, Scanning Electron Microscope (SEM), Attraction, and Fourier Transform Infra Red (FT-IR). The research began with the manufacture of lotus seed starch and continued with the manufacture of Edible Film. The results of the water absorption test obtained were F1 treatment (edible film lotus seed starch with the addition of ZnO-NP and glycerol as strengthening agents) as the best treatment with. Research on edible film based on lotus seed starch with the addition of ZnO-NP and glycerol in general can improve the performance of physical and mechanical properties. The addition of ZnO-NP and glycerol is the best formulation based on the observations that have been made. The higher the ZnO-NP concentration added, the lower the aw, water absorption, and water vapout transmision rate values. Based on the results of scanning electron microscope observations, it is evident that there is spread of ZnO-NP in the F1 and F3 treatments. It is hoped that in future research it will be possible to observe the antibacterial activity of edible film and be able to apply it to processed food products from films based on lotus seed starch. Penelitian ini bertujuan untuk menganalisis sifat fungsional kemasan film berbasis pati biji lotus (Nelumbo nucifera) dengan penambahan NP-ZnO dan gliserol. Metode penelitian yang digunakan yaitu metode eksperimental laboratorium yang dirancang dengan 3 taraf perlakuan dengan 2 kali ulangan. Data yang diperoleh secara statistika deskriptif. Parameter yang diamati meliputi 6 uji yaitu water absorption, water vapour transmition rate (WVTR), warna, scanning electron mikroscope (SEM), daya tarik, dan fourier transform infra red (FT-IR). Penelitian diawali dengan pembuatan pati biji lotus dan dilanjutkan dengan pembuatan edible film. Hasil dari uji water absorption yang didapat yaitu perlakuan F1 (edible film pati biji lotus dengan penambahan NP-ZnO dan gliserol sebagai agen penguat) sebagai perlakuan terbaik dengan. Penelitian mengenai edible film berbasis pati biji lotus dengan penambahan NP-ZnO dan gliserol secara umum mampu meningkatkan performa sifat fisik dan mekanis. Penambahan NP-ZnO dan gliserol adalah formulasi yang terbaik berdasarkan pengamatan yang telah dilakukan. Semakin tinggi konsentrasi NP-ZnO yang ditambahkan, maka mampu menurunkan nilai water absorption, dan water vapour transmition rate (WVTR). Berdasarkan hasil pengamatan scanning electron microscope terbukti bahwa terdapat penyebaran NP-ZnO pada perlakuan F1 dan F3. Diharapkan untuk pada penelitian selanjutnya dapat melakukan pengamatan terhadap aktivitas antibakteri pada edible film dan dapat mengaplikasikannya ke produk-produk olahan pangan dari film berbasis pati biji lotus.
