Abstract
SITI ARINI SARAH DIBA. Production of Rice Low Glycemic Index with The Addition of Gambir Extract (Supervised by SUGITO and UMI ROSIDAH). The objective of research was to determine the effect of soaking time process and the concentration of gambir extracts to decrease glycemic index of rice. The research was conducted at the Agricultural Product Processing Chemistry Laboratory, Departement of Agricultural Faculty, Sriwijaya University and Chemistry Laboratory, Department of Chemistry Faculty. The research used a factorial completely rancomized design with two factors, soaking time (1 hour, 2 hour, 3 hour) and concentration of gambir extracts (1%, 2%, 3%) and were done in triplicates. Observed parameters were amilose value, amylopectin value, glycemic index of fungsional rice, and the organoleptic tests (acceptance test and the diffrences with control). The result showed that soaking times and addition of gambir extracts had significant effects on all treatments. The best treatment of this research was A1B3 (1 hours soaking times and addition number of gambir extract 3%) with the highest number of amylose (20.25%) and amylopectin (79.75%). This treatment could reduce the number of glycemic index of fungsional rice from control (IR42) that had 75,2% of glycemic index (high category) to rice with medium index glycemic category (63,7%).
