Abstract

This research aims to determine the physicochemical and sensory characteristics of tilapia fish meatballs (Oreochromis niloticus) with the addition of carrots used a completely randomized factorial design (RALF) with 2 treatment factors, namely factor A, proportion of tilapia and factors B proportion of carrots). Then 12 treatments were obtained and each was repeated 3 times. The parameters observed in this study include chemical characteristics (moisture content, fat content, ash content, and protein content), physical characteristics (hardness,and color) and sensory (aroma, color, taste). These results indicate that the characteristics of tilapia fish meatballs with the addition of carrots was significantly on chemical and physical characteristics except on ash content. The treatment of the proportion of fish meatballs with the addition of carrots was significantly different in terms of water content, fat content, protein content, and hardness. The proportion of fish treated with the addition of carrots was related to color (lightness, redness, yellowness) and was not significantly different to ash content, and the addition of carrots could improve the chemical, physical and sensory characteristics of the treatment carried. Based on the results of research that has been carried out, further research can be carried out on tilapia fish meatballs with the addition of carrots with different treatments and different formulas. These results indicate that treatment A1B1 is the best treatment based on hedonic tests for aroma (score 3.00), taste (3.20), and color (3.04).
