Abstract
The purpose of this research was to analize quality deterioration of arsik carp (Cyprinus carpio) during storage use polipropilene packaging under condition. The research was conducted from March to April 2016. This research used a Factorial Randomized Block Design (FRBD) two factors, the type of packaging factor (vacuum and non-vacuum) and storage time factor (1 day, 2 days, 3 days, 4 day and 5 days). Each treatment was replicated two times. The attributes observed were protein content, fat content, water content, sensory test, and microbiology / TPC. The results showed thet packaging and storage time treatment significantly affect the value of the proximate (protein content, fat content and moisture content) and had a significant effect on the value of organoleptic taste, texture and aroma of carp arsik. The results of TPC analysis showed thet vacuum packaging had lower TPC value than the non vacuum and was safe to be eat end up to 3rd day of storage. The results of proximate analysis on the type of vacuum and non vacuum packaging with nutritional content that is best in protein content (15.67% and 14.32%), fat content (9.76% and 8.89%), water content (57.88% and 57.55%).
