Abstract
The objective of this research was to determine the Formulation of Gaharu leaves (Aquilaria malaccensis ) coffee. The experiment used a Design Completly Randomized Factorial with two treatments and three replications for each treatment. The first factor was Aquilaria malaccensis leaves ekstract concentration (10%, 20%, and 30% v/v) and the second factor was maltodextrin consentration (5% and10% b/v). The observed parameters were physical (water solubility index, yield), chemical characteristics (moister content, fenolic content and antioxidant activity), and organoleptic test used hedonic test of aroma, and taste. The results showed that the concentration of Aquilaria malaccensis leaves ekstract had significant effects on fenolic content and antioxidant activity, while the consentration of maltodextrin had significants effect on water solubility index, yield, moister content, fenolic content and antioxidant activity. Based on functional characteristic and efficiency, the treatment of A3B1 (Aquilaria malaccensis leaves ekstract 30% and maltodextrin 5%) was the recomended treatment with the highest level of water solubility index 52,41%, yield 8,21%, moisture content 3,49%, phenolic content 403,86 mg GAE/ 100g and antioxidant activity 1081,59 ppm, and hedonic score (aroma 2,76 and taste 2,92.)
