Abstract
The separation of solid from liquid using centrifuge. The principle of centrifuge process is liquid separation or liquid with different density using centrifuge force. Centrifuge will bring mixture to rotation zone and also influence by gravity. Both component will be separated by different centrifuge force. Solid will show tendensy to separate from center and held by rotation axis. The advantages using centrifuge for making virgin coconut oil are time saving, no chemical additive, good odour like fresh coconut, free contamination and better yield than mechanical and fermatation method. Virgin coconut oil content high lauric acid (45 % - 55%). Lauric acid is saturated fatty acid with medium chain triglyceride (MCT). MCT can improve metabolism rate. It willalso change to energy. Key Words : VCO Centrifugation
