Abstract

This study aimed to determine the characteristics of kenikir leaves dried by foam mat drying method. This study used a factorial completely randomised design, namely differences in drying temperature (A) consisting of 3 treatment levels (50°C, 60°C and 70°C) and differences in drying time (B) consisting of 3 treatment levels (4 hours, 5 hours and 6 hours), thus obtaining 9 treatment combinations. Each treatment was repeated 3 times to obtain 27 experimental units. Parameters observed in this study included yield, dissolving speed, browning index, water absorption capacity, water content, ash content and antioxidant activity. The results showed that the difference in temperature had a significant effect on the value of yield, dissolving speed, browning index, water content and antioxidant activity. The effect of different drying time significantly affected the yield value, dissolving speed, browning index, moisture content and antioxidant activity. The interaction of different temperature and drying time treatments significantly affected the yield and dissolving speed. The best treatment was A1B1 (drying temperature 50°C: drying time 4 hours) with antioxidant activity value of 1,135 μg/mL, yield 28.22%, dissolving speed 2.9 minutes, browning index 0.747, water absorption capacity 230.77%, moisture content 11.83% and ash content 6.39%.
