Abstract

This research aimed to study effect of drying temperature and drying time on the physical and chemical properties of red dragon fruit peel powder. This research used a Completely Randomized Design (CRD) in a factorial with two treatment factors and each treatment was repeated three times. Factor A was drying temperature (A1 = 50ºC, A2 = 60ºC) and factor B was drying time (B1 = 4 hours, B2 = 6 hours, B3 = 8 hours). Observed parameters were physical characteristic (color L*, a*, b* and yield) and chemical characteristic (total anthocyanin content, water content, and ash content). The results showed that factor A (drying temperature) and factor B (drying time) significantly affected the redness (a*), yellowness (b*), total anthocyanin content, yield, and water content. The interaction of the two treatment factors had a significantly affected on the yield and total anthocyanin content of red dragon fruit peel powder. The best treatment in this study was the treatment A1B1 (drying temperature 50ºC and drying time 4 hours) with a lightness (L*) of 64.63, redness (a*) of +43.74, yellowness (b*) of +9.92, yield of 10.02%, *, total anthocyanin content of 15.92 mg/g, and ash content of 8.63%.
