Abstract
Daun gambir berpotensi sebagai bahan dasar teh putih, tetapi penggunaannya masih terbatas akibat rasa sepat dan pahit. Penambahan daun stevia sebagai pemanis alami dapat meningkatkan cita rasa tanpa mengurangi manfaat kesehatannya. Penelitian ini bertujuan untuk mengetahui karakteristik kimia, fisik, fungsional, dan organoleptik teh putih daun gambir dengan penambahan daun stevia. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) Non Faktorial dengan satu perlakuan (konsentrasi daun stevia) dengan 6 taraf perlakuan (0%, 10%, 15%, 20%, 25%, 30%) dan masing-masing perlakuan dilakukan pengulangan sebanyak 3 kali. Parameter yang diamati meliputi karakteristik sensoris menggunakan uji kesukaan (aroma, rasa, dan warna), karakteristik kimia (kadar abu dan kadar air), dan karakteristik fisik (warna), dan karakteristik fungional (aktivitas antioksidan dan total fenol). Hasil penelitian menunjukkan bahwa penambahan daun stevia berpengaruh nyata terhadap kadar abu, antioksidan, total fenol, uji organoleptik (rasa dan warna), dan tingkat kemanisan. Teh putih daun gambir dengan konsentrasi 15% menjadi perlakuan terbaik berdasarkan nilai aktivitas antioksidan 16,60 ppm, kadar abu 6,74%, total fenol 288,93 mgGAE/mg dan uji hedonik terhadap aroma, rasa dan warna.
