Abstract

The purpose of this research were to : 1) Counted income of fresh oyster mushroom and crispy oyster mushroom, 2) Counted the magnitude of added value from processing fresh oyster mushroom be crispy oyster mushroom, 3) Formulated the strategy to develop and keep crispy oyster mushroom business. This research carried out ini Palembang city. The data has been collecting on March until April 2016. The method that used in this research was survey method and the sampling method that used was snowball sampling. Based on the snowball sampling there are 19 oyster mushroom’s farmers in Palembang city and 3 of them also processed fresh oyster mushroom be crispy oyster mushroom. The data collected in this reseach were primary data and secondary data. The research results showed that the income from fresh oyster mushrooms and crispy oyster mushrooms in a period 2015 was Rp 35.242.578,95 and 22.989.300,00. Processing fresh oyster mushrooms be crispy oyster mushrooms gave the value added Rp 11.540,95 with value added ratio 15,45% and including in medium category. Based on the SWOT analysis with SWOT matric there are the alternative strategy that can be used to develop and keep the crispy oyster mushrooms business as follows : (1) SO strategy, maintain and improve the quality of materials that use to make crispy oyster mushroom so it can match with healthy lifestyle trend and use the availability of fresh oyster mushroom to fill a customer’s demand. (2) ST strategy, increase the quality of products and the price is cheap so it can beat the new competitors and denied the dangerous of addictive substances issue, and improve the fresh oyster that always available to cover the production costs. (3) WO strategy, Use the technology development for manufacturing the trademarks and good packaging, and increasing the promotion in order to make it match with the trend of a healthy lifestyle . (4) WT strategy , increasing the promotion , making the trademarks and the manufacturing the good packaging to defeat new competitors and parried the issue of using the addictive substances.
