Abstract
The objective of the research was to analyze moisture and free fatty acid content changes in palm kernel during storage. The research used a Factorial Randomized Block Design with two treatments and three replication for each treatment. The first factor are the initial palm kernel moisture content A1 (crude kernel and mature kernel). The second factor are storage time (1, 4, 7, 10, and 13 days). The observed parameters were moisture content, free fatty acid, oil content and iodine value. The results showed that initial palm kernel moisture content had significant effects on moisture content, free fatty acid, and iodine. Storage time had significant effects on moisture content, free fatty acid, oil content and iodine. Interaction of the two factors had significant effect on moisture content. The highest moisture content of 16.87% was found on palm kernel with 13 day storage and the lowest one of 5.10% was found on palm kernel with 1 day storage. The highest free fatty acid content of 9.98% and the lowest one of 5.11%. The highest oil content of 16.70% and the lowest one of 12.24%. The highest iodine value of 23.80% and the lowest one of 4.80%. The rate of quality changes, respectively for moisture content and free fatty acid on crude kernel and mature kernel is 0.4432% per day, 0.3729% per day, 0.1456% per day and 0.0415% per day.
