Abstract
The purpose of this research was to analyse the influence of jungga pulp concentration and storage time on commoun carp naniura chemical characteristic and microbilogy. The research was conducted on November until December 2016. This research used a Factorial Randomized Block Design (RAKF) two factors, the type of acid factor (the concentration of acid and storage time factor (0 day and two day). The parameters observed were pH,water content, total volatile base (TVB) and microbiological. The result of naniura chemical test showed that the acid concentration and storage time had no significant effect on the pH value but had significant effect on the moisture value. The results of analysis microbiological jungga citrus treatment with lime showed the same value. Based on the results of microbiological analysis treatment of acid concentration of 8%, 11%, and 14% shows the value of microbiological past the maximum limit. The result of chemical analysis on the three acid concentration showed that the jungga treatment had the best nutrient content in water content 79.71%, pH 4.92 and TVB 13.62 mg / 100 g. Based on the average test value TVB of commuon carp naniura naniura with the addition of jungga at different concentration showed that the best A3 treatment was about 14%
