Abstract

The process of osmosis fruit of chayote is done as a treatment prior to the drying process. The objective of this research was to study the rate of mass transfer of materials during the process of soaking osmosis as a treatment process of drying. This research was conducted on April to July 2017 at Agricultural Chemistry Laboratory and Laboratory of Biosistem Engineering, Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University, Indralaya. This research was done by using the randomized block design (RAKF) using three factors and three replications. First factor was the size of material piece R1 (10 x 10 mm) and R2 (5 x 5 mm), second factor was the temperature of medium osmosis L1 (300C) and L2 (400C), and third factor was the comparison of the composition sugar and salt S1 (1 : 1), S2 (1 : 3) and S3 (1 : 5). The parameters observed were the loss of water (water losses), the amount of increase in solid(solid gain), moisture content, color and rendemen. The results showed the highest water loss (water losses) was on treatment R2L2S3 it was 51,35 %, meanwhile the lowest was on R1L1S1 it was 29,17%. The highest increase in solid (solid gain) also produced on treatment R2L2S3 it was 71.18% meanwhile the lowest was on R1L1S1 it was 24.17%. That treatment R2L2S3 was the treatment that produce the lowest material water content on osmosis which is 44.8% meanwhile the highest R1L1S2 it was 71.3%. The highest water levels after the material on the oven produced on treatment R1L1S1 it was 53.1% meanwhile the lowest was on R2L2S3 it was 33.8%. The level of brightness on color of material was able to be maintained during the process of osmosis, the color produced by the chayote is Yellow (Y) and Yellow Red (YR) then turns into Yellow (Y) when the material on the oven. Rendemen materials has decreased with increasing the amount of salt in medium osmosis. The highest randemen produced on treatment R2L2S3 it was 3,25%, meanwhile the lowest was on R1L1S2 it was 2,34%. In addition to research, the level of treatment of solubility and ingredients on medium chayote fruit age also affects the mass transfer processes in materials.
