Abstract
High Voltage Technology could give a positive impact for the environment in this world. One of them is the forming of ozone O3 which can be used as a decontaminator in food product such as vegetable, fish meat, and poultry meat. The death of bacteria caused by ozone treatment will maintain the sensory (appearance, colour, odor and texture) quality of meat. This experiment has a purpose to maintain the snakehead fish (Channa striata) fillet quality with ozone treatment. This experiment using DBD (Dielectric Barrier Discharge) Ozone. Ozone that used are generated from the DBD chamber using alumunium electrodes with a material thickness of 0.5 mm and a gap between the electrode of 1.0 mm. Dielectric that used as a barrier in this experiment are made from sodalime glass and its thickness is 1 mm. The variations in the duration of Ozone treatment in this study were ranging from 10, 15, 20, 25, 30, 45, 60 minutes The data showed that the highest concentration value was 480.7 ppm which formed by the electrode with thickness was 0.5 mm and the Input Voltage was 6 kV. Duration of exposured for 45 minutes and 60 minutes could maintain the sensory quality of snakehead fish 1 day better in odour and texture aspect. The difference is quiet significant when the exposure of fish meat are above 30 minutes. The pH value in snakehead fish in this research are in constant value and doesn’t change significantly.
