Abstract
Microorganisms are one of the causes of health problems that can infect the digestive tract of poultry. Pathogenic bacteria that infect the digestive tract, namely Salmonella typhi and Escherichia coli. This study aims to determine the antibacterial activity of organic acids produced in the liquid fermentation process of the combination of pineapple waste and Indigofera zolingeriana leaves against the growth of pathogenic bacteria, which was carried out from July to September 2018 in the experimental enclosure of Animal Husbandry Study Program, Laboratory of Agricultural Technology Microbiology and Laboratory of Animal Nutrition and Food, Faculty of Agriculture, Sriwijaya University.The design used was a completely randomized design (RAL) with 5 treatments and 4 replications. The treatment in this study was a combination of pineapple waste and leaves of Indigofera zollingeriana, namely: P1 (pineapple waste100%), P2 (pineapple waste 98% and Indigofera zollingeriana leaves2%), P3 (pineapple waste 96% and Indigofera leaves 4%), P4 (pineapple waste 94% and Indigofera zollingeriana leaves 6%), P5 (pineapple waste 92% and Indigofera zollingeriana leaves 8%). The parameters observed were the determination of the pH value of organic acids measured using a pH meter, and the antibacterial activity of organic acids against Salmonella typhi and Escherichia coli bacteria using the disc diffusion method. The results showed that the combination organic pineapple acid and Indigofera zollingeriana leaves affected the pH value of organic acids and were able to inhibit the growth of Salmonella typhi and Escherichia coli bacteria. Based on the results of the study it can be concluded that the addition of the level of Indigofera zollingeriana produces organic acids which can reduce the pH value and can have inhibition on the growth of Salmonella typhi and Escherichia coli bacteria with the best treatment, namely fermentation pineapple waste 94% and Indigofera zollingeriana leaves 6%.
