Abstract
Various of human activities has make worse environments condition such as industrial activities, transport activities and using of air condition. This activity is a source of free radicals which harm the human body. Effects of free radicals in the body will be neutralized by antioxidants which is formed by the body itself and supplements from outside through food, drink or drugs. Seaweed has antioxidant content that are useful for humans. When the seaweed is processed, it will produce hydrocolloid compound which is basic product (the result of primary metabolism) of agar-agar, karaginan, and alginate. Agar-agar, karaginan and alginate that will be tested of the antioxidant has in form of result flour production which located in Yogyakarta. The aim of the research is to determine the antioxidant activity in the agar-agar, karaginan and seaweed alginate. Sample extraction is solved macerationly with methanol. Antioxidant activity test is solved with the reduction of free radicals with use DPPH method and control is used vitamin C. The results of the test is shown that alginate is active as an antioxidant with value of IC50 is 18.35 �} 0.06. On the vitamin C which is a pure compound with value of IC50 is 14.81 ± 0.62 ppm. While the agar-agar and karaginan, its value of IC50 each 404.69 �} 11.22 ppm and 205.60 ± 3.42 ppm which means both of them are not active as an antioxidant.
