Abstract
Penelitian ini bertujuan untuk menganalisa kandungan kalori-protein, daya terima siswa sekolah dasar dan uji kesukaan panelis terhadap makanan padat gizi “Campur Sari” yang dihasilkan. Penelitian ini dilakukan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Universitas Sriwijaya dan Laboratorium kimia Jurusan Teknik Kimia Politeknik Universitas Sriwijaya. Populasi pada penelitian ini adalah anak SD yang berusia 6 sampai 12 tahun. Pengambilan sampel menggunakan metode Purposive Sampling. Makanan padat gizi “Campur Sari” terdiri dari lima jenis makanan yaitu stik ikan gabus, stik jagung manis, pillus kedelai, dendeng ikan gabus dan stik ubi kayu. Rata-rata kandungan energi-protein dari makanan padat gizi “Campur Sari” yaitu 4.754 Kal dan 5,076 g protein/100 g bahan. Uji kesukaan terhadap makanan padat gizi “Campur Sari” di SDN Ulak Bedil, SDN Ulak Banding dan SDN Tanjung Seteko Kecamatan Indralaya Kabupaten Ogan Ilir adalah 79,73 % menyatakan suka, 12 % menyatakan biasa dan 8 % menyatakan tidak suka. Skor rata-rata dari uji hedonik terhadap makanan padat gizi “Campur Sari” yaitu antara 1,5 sampai 3,82. Makanan padat gizi “Campur Sari” memenuhi syarat dari PMT-AS yaitu mengandung 300 Kal dan 5 g protein.
