Abstract
Penelitian ini bertujuan untuk mempelajari karakteristik Fisik, kimia dan organoleptik mi basah dengan penambahan sari wortel. Penelitian ini munggunakan Rancangan Acak Kelompok yang disusun secara Faktorial (RAKF) dengan dua perlakuan dan diulang sebanyak tiga kali. Perlakuan pertama adalah penambahan konsentrasi sari wortel (25%, 50%, 75%, 100%) dan perlakuan kedua adalah varietas wortel (Chantenay dan Imperator). Parameter yang diamati adalah kadar air, kadar abu, persen perpanjangan, analisis p - karoten, kadar serat, dan uji hedonik. Konsentrasi sari wortel, varietas wortel dan interaksi antara konsentrasi sari wortel dan varietas wortel berpengaruh nyata terhadap kadar air, kadar abu dan persen perpanjangan mi basah. Nilai kandungan p - karoten mi basah dengan penambahan sari wortel dengan varietas Chantenay lebih tinggi dibanding mi basah dengan penambahan sari wortel dengan varietas Imperator. perpanjangan mi basah tertinggi pada penambahan konsentrasi sari wortel 25%. Uji hedonik ipenunjukan bahwa penambahan sari wortel pada mi basah memberikan pengaruh nyata terhadap warna, aroma dan tekstur mi basah.
