Abstract
Penelitian bertujuan untuk mengetahui pengaruh penambahan agar-agar terhadap karakteristik fisik, kimia, dan sensoris tahu. Penelitian dilaksanakan pada bulan April 2013 sampai dengan November 2013 di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya. Penelitian menggunakan metode Rancangan Acak Lengkap (RAL) non Faktorial dengan perlakuan yaitu konsentrasi penambahan agar-agar yang terdiri dari 5 taraf perlakuan. Masing-masing perlakuan diulang sebanyak 4 (empat) kali. Parameter yang diamati meliputi karakteristik fisik (kekerasan dan sineresis), karakteristik kimia (kadar air, kadar abu, dan kadar serat pangan), serta sensoris dengan menggunakan uji hedonik (kesukaan) terhadap kenampakan, aroma, rasa, dan tekstur. Hasil penelitian menunjukkan bahwa penambahan agar-agar berpengaruh nyata terhadap kekerasan, sineresis , kadar air, kadar abu dan sensoris tahu. Perlakuan terbaik pada penelitian ini adalah B (penambahan agar-agar 0,5%) dengan nilai karakteristik fisik (tekstur 727,85 gf, sineresis 38,591, karakteristik kimia (kadar air 83,983%, kadar abu 0,757%, kadar serat makanan yaitu NDF 1,967%; ADF 1,1175%; Hemiselulosa 0,8475%; Selulosa 0,47%; Lignin 0,122%; dan Pektin 0,41% ), dan uji sensoris (kenampakan 3,21 (suka) ; aroma 2,64 (tidak suka) ; rasa 3,08 (suka) ; dan tekstur 3,04 (suka).
