Abstract

Penelitian ini bertujuan untuk mengetahui efektivitas penggunaan kombinasi larutan garam, sukrosa dan jeruk nipis dalam mengawetkan fillel ikan gabus selama penyimpanan. Penelitian dilaksanakan pada 19 November 2012 sampai 7 November 2013 di Laboratorium Teknologi Hasil Perikanan, Laboratorium Budidaya Perairan, Laboratorium Kimia Jurusan Teknologi Hasil Pertanian dan Laboratorium Kimia dan Kesuburan Tanah Jurusan Ilmu Tanah Universitas Sriwijaya Indralaya. Metode yang digunakan yaitu Rancangan Acak Lengkap Faktorial dan diulang sebanyak dua kali. Faktor perlakuan terdiri dari bahan pengawet organik (tanpa pengawet, kombinasi garam dan sukrosa, serta kombinasi garam, sukrosa dan jeruk nipis) dan lama penyimpanan (tanpa penyimpanan, 2, 4, 6, 8, 10, 12, 14, dan 16 hari). Parameter meliputi analisis mikrobiologi (TPC), analisis kimia (TVB-N, pH), analisis fisik (kehilangan air, warna) dan uji sensoris (kenampakan, bau dan tekstur). Hasil penelitian menunjukkan bahwa perlakuan penambahan pengawet dan lama penyimpanan berpengaruh terhadap TVB, pH, kehilangan air, warna dan penerimaan sensoris. Fillet ikan pada perlakuan kombinasi garam, sukrosa dan jeruk nipis selama penyimpanan adalah yang paling efektif dalam menghambat pertumbuhan bakteri, mencegah meningkatnya nilai TVB, pH, kehilangan air hingga Serta paling efektif dalam hari ke-14. menjaga sifat sensoris dari fillet ikan gabus.
