Abstract

Streptococcus mutans adalah bakteri gram positif yang merupakan bakteri utama penyebab terjadinya karies gigi. Minyak zaitun mengandung unsur fenolik yang berperan sebagai zat antimikroba. Berdasarkan penelitian sebelumnya diketahui bahwa minyak zaitun memiliki sifat antimikroba terhadap gram positifseperti Staphylococcus aureus. untuk mengetahui efek zat antimikroba dari minyak zaitun dalam menghambat pertumbuhan Streptococcus mutans sebagai alternatif bahan preventifkaries gigi. Sampel penelitian ini adalah dua jenis minyak zaitun yaitu extra Virgin olive oil dan olive oil (Virgin olive oil and refined olive oil), Sodium fluoride sebagai kontrol positif, dan aquades sebagai kontrol negatif. Penentuan uji daya hambat minyak zaitun terhadap S.mutans menggunakan metode difusi. Aktivitas antimikroba minyak zaitun terhadap pertumbuhan S.mutans diukur berdasarkan diameter zona hambat yang terbentuk. Data dianalisis menggunakan SPSS dengan uji One Way ANOVA dilanjutkan dengan uji LSD (p < 0,05). Hasil penelitian menunjukkan terdapat perbedaan yang bermakna (p < 0.05) dari tiap kelompok dalam menghambat pertumbuhan Streptococcus mutans. ExtraVirgin olive oil dan olive oil memiliki daya hambat yang lebih besar dibandingkan aquades dan extra Virgin olive oil memiliki daya hambat yang lebih besar dibandingkan dengan sodiumfluoride. Minyak zaitun jenis extra Virgin olive oil memiliki kemampuan menghambat pertumbuhan S.mutans yang paling besar dibandingkan dengan olive oil, sodiumfluoride, dan aquades.
