Abstract

Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris, Jurusan Teknologi Pertanian, Fakultas Pertanian Universitas Sriwijaya, Indralaya, Sumatera Selatan pada bulan November 2012 sampai dengan Mei 2013. Tujuan dari penelitian ini adalah untuk menganalisa karakteristik fisik, kimia, dan organoleptik permen jeli daun kembang sepatu. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial (RALF) dengan dua faktor perlakuan dan perlakuan diulang sebanyak tiga kali setiap kombinasi. Faktor pertama jumlah ekstrak daun kembang sepatu (Ai = 50 gram dan A2 = 74 gram) dan faktor kedua jumlah gelatin ( Bi = 10 % (b/v), B2 = 15 % (b/v) dan B3 = 20 % (b/v)). Hasil penelitian menunjukkan bahwa perlakuan jumlah ekstrak daun kembang sepatu berpengaruh nyata terhadap lightness, kadar air, pH dan aktivitas antioksidan. Perlakuan jumlah gelatin berpengaruh nyata terhadap tekstur, warna 0lightness, chroma dan hue), kadar air, kadar abu, dan pH. Perlakuan terbaik terdapat pada perlakuan A2B2 (ekstrak daun kembang sepatu 75 gram dan gelatin 15%) dengan karakteristik fisik : tekstur 37,20 gf, lightness 36,97%, chroma 18,13% dan hue 64,23°; kimia : kadar air 50,75%, kadar abu 0,40%, kadar gula total 15,73%, pH 5,17 klorofil total 1,80 mg/kg dan nilai IC50 1,20 mg/mL. Skor kesukaan untuk tekstur, warna dan rasa dari perlakuan terbaik adalah 2,48; 2,52 dan 2,7, secara berturut turut.
