Abstract

The method of preservation of immersed duck eggs in chitosan and coconut oil solutions can maintain the interior quality of local duck eggs. The aim of this research was to obtain the effect of soaking chitosan and coconut oil solution on the interior quality of duck eggs. The research was held from September to October 2018 in Animal Feed and Nutrition Laboratorium of Animal Science Department, Agriculture Faculty of Universitas Sriwijaya. Complete randomized designed (CRD) of 5 treatments and 4 replications were applied to this research. The treatments were T0 (control), T1 (immers with 1% chitosan solution), T2 (immers with 2% chitosan solution), T3 (immers with 1% chitosan solution), M4 ( immers with 100% coconut oil). Observered parameters were decrease in egg weight, egg white weight, and egg yolk weight, weight of egg yolk. Based on the results of the study it can be concluded that the preservation of eggs using chitosan and coconut oil solutions affect the decrease in egg weight and weight of the egg white, but does not affect the weight of the yolk. Treatment using coconut oil shows the best results in maintaining the internal quality of local duck eggs. The average value generated from the study is that the average weight loss ranges from 1.26% - 4.80%, the average egg white weight ranges from 37.45% - 43.98%, the average weight of egg yolk ranges from 35.58% - 42.09% .
