Abstract

Penelitian ini bertujuan untuk mengisolasi dan mengidentifikasi jamur yang berperan dalam kerusakan pisang sale yang berasal dari tiga sentra produksi di propinsi Sumatera Selatan. Penelitian ini dilaksanakan pada bulan September 2008 sampai dengan Juni 2009 di Laboratorium Kimia Hasil Pertanian, Mikrobiologi Hasil Pertanian Jurusan Teknologi Pertanian dan Laboratorium Fitopatologi Jurusan Hama dan Penyakit Tumbuhan Fakultas Pertanian Universitas Sriwijaya, Indralaya. Metode yang digunakan pada penelitian ini adalah metode eksplorasi. Penarikan contoh pisang sale diambil dari daerah Ujanmas (Muara Enim) pengolahan melalui proses pengasapan, Bunut (OKI) pengolahan melalui proses pengepresan, penjemuran dan penggorengan dan daerah Sekayu (MUBA) pengolahan melalui proses penjemuran sinar matahari. Parameter yang diamati adalah pengamatan makroskopis dan mikroskopis koloni jamur, kadar air dan aktivitas air (Aw). Pisang sale yang berasal dari daerah Sekayu (MUBA) memiliki kadar air tertinggi (19,531%) dibandingkan contoh yang berasal dari Ujanmas dan Bunut, Aktivitas air (Aw) 0, 6650. Secara fenotip, jamur dominan yang berperan dalam kerusakan pisang sale adalah genus Aspergillus sp dan Penicillium sp.
