Abstract

NURHASANAH. Karakteristik Mi Kremes dengan Penambahan Tepung Udang Rebon (Mysis relicta) (Dibimbing oleh SUSI LESTARI dan RINTO). Penelitian ini bertujuan untuk mengetahui karakteristik mutu kimia, fisik dan sensoris mi kremes dengan penambahan tepung udang rebon (Mysis relicta). Penelitian ini dilakukan secara Eksperimental Laboratorium dengan metode Rancangan Acak Kelompok (RAK). Penelitian ini menggunakan 1 faktor perlakuan dengan 4 taraf perlakuan yaitu penambahan tepung udang rebon 0% (A0), 5% (A1), 10% (A2) dan 15% (A3) dengan pengambilan data diulang sebanyak 3 kali. Parameter yang diamati dalam penelitian ini meliputi rendemen mi, kadar air, protein, lemak, abu, karbohidrat, analisis tekstur dan analisis sensoris meliputi warna, aroma, rasa, tekstur dan tekstur dimulut. Berdasarkan hasil penelitian, diketahui bahwa perbedaan penambahan tepung udang rebon berpengaruh nyata terhadap rendemen mi kremes, kadar protein, kadar lemak, kadar abu dan kadar karbohidrat tetapi tidak berpengaruh nyata terhadap kadar air dan analisis tekstur. Perlakuan terbaik yang dipilih pada penelitian ini yaitu mi kremes dengan penambahan tepung udang rebon 5% (A1) yang menghasilkan nilai kadar protein 13,70%, kadar lemak 18,16%, kadar abu 2,63% dan kadar karbohidrat 58,33%. Hasil analisis sensoris menunjukkan bahwa perlakuan berpengaruh nyata terhadap warna dan tekstur dimulut serta perlakuan tidak berpengaruh nyata terhadap parameter rasa, aroma dan tekstur.
