Abstract
This research to aimed to obtaining the best albumin extraction using boiling method with the addition of salam leaves, basil leaves, and a combination of salam leaves and basil leaves to reduce the fishy odor to a level acceptable to the community. The study employed a Random Block Design (RBD) with 4 treatment and 3 replications. Treatments included different leaf additions in albumin extraction: (A0) no leaves, (A1) basil leaves, (A2) salam leaves, and (A3) salam leaves and basil leaves combination. Parameters were protein content, protein profile using SDS-PAGE, and hedonic test. The results of the protein content analysis showed no significant effect on reducing protein content (0.50%. to 1.20%) . The albumin protein profile of snakehead fish had a molecular weight range of 10,00 kDa – 140,00 kDa, with albumin molecular weight ranging from 55,00 – 75,00 kDa. Based on hedonic test has concluded that the edition of basil leave, salam leave could color (4.92-6.63), aroma (5.20- 5.68), taste (4.72-5.48), and texture (5.24-6.00) of snakehead albumin. The results of the sensory analysis were accepted by the panelists because they were able to reduce the fishy smell.
