Abstract

This research aims to determine the drying rate of lotus seeds produced by a solar dryer and to determine the characteristics of lotus seeds that have been dried using a solar dryer. This research was carried out experimentally in the field and laboratory using 2 treatments and 3 repetitions, namely A: drying with direct sunlight and B: drying with a solar dryer. In this research, drying time, air temperature, air humidity, air speed, drying rate, yield, starch content and whiteness were calculated. The results of this research show that the solar dryer produces an air temperature of 40.31°C, air humidity of 60.52%, air speed of 6,57 m/s, drying time of 10 hours, starch content of 55.28%, and whiteness of 82.88 %. Lotus seed yield 12% water content, namely 18.96% Drying in direct sunlight produces an air temperature of 37.57°C, air humidity 66.09%, air speed 4,55 m/s, drying time 13 hours, starch content 55 .56%, and whiteness 83.58%. The yield of lotus seeds has a moisture content of 12%, namely 18.97%. Keywords: drying, lotus seeds, solar dryer, sunlight
