Abstract
This study aims to determine the effectiveness of anti-ant and antibacterial products from lemongrass plants (Cymbopogon citratus) and chitosan storage on salted fish. This study was conducted experimentally in the laboratory with 5 levels and 3 repetitions, namely F0: control, F1: Insecticide from a mixture of Lemongrass and Chitosan on Day 0, F2: Insecticide from a mixture of Lemongrass and Chitosan on Day 10, F3: Insecticide from a mixture of Lemongrass and Chitosan on Day 20, F4: Insecticide from a mixture of Lemongrass and Chitosan on Day 30. The parameters of the study were the calculation of the number of ants that perched, the identification of decaying bacteria, the identification of coliform bacteria and color analysis. The results of the study showed that the number of ants that perched during storage ranged from 8 to 35 ants. The results of the calculation of the highest number of ants were found in salted fish without treatment and the results of the calculation of the lowest number of ants were in salted fish sprayed with lemongrass insecticide and chitosan stored on day 0. The results of the identification of putrefactive bacteria ranged from 3,18 Log CFU/mL to 4,28 Log CFU/mL with the highest number of microbes found in salted fish samples without treatment (control) and the lowest number of microbes found in salted fish sprayed with insecticides from a mixture of lemongrass and chitosan on day 0. The results of the identification of coliform bacteria in the control sample did not meet the plate count (SPC) standard and salted fish sprayed with lemongrass and chitosan insecticides were not detected coliform bacteria. In the results of the color test, the longer the insecticide of lemongrass and chitosan, the darker the color of the salted fish after spraying, which is indicated by the Lightness value range of 43,38 to 50,57. Penelitian ini dilakukan secara eksperimental laboratorium dengan 5 taraf dan 3 kali pengulangan yaitu F0 : kontrol, F1: insektisida dari campuran serai dan kitosan penyimpanan hari ke-0, F2: insektisida dari campuran serai dan kitosan penyimpanan hari ke-10, F3: insektisida dari campuran serai dan kitosan penyimpanan hari ke-20, F4: insektisida dari campuran serai dan kitosan penyimpanan hari ke-30. Parameter penelitian yang digunakan adalah frekuensi jumlah semut, identifikasi bakteri pembusuk, identifikasi bakteri coliform dan analisis warna. Hasil penelitian menunjukan rata-rata semut yang mendatangi ikan asin yang sudah disemprot insektisida penyimpanan hingga hari ke-30 berkisar 8 – 35 semut. Hasil perhitungan rata-rata semut tertinggi terdapat pada ikan asin tanpa perlakuan dan hasil perhitungan rata-rata semut terendah ada pada ikan asin yang disemprot insektisida serai dan kitosan penyimpanan hari ke-0. Hasil identifikasi bakteri pembusuk berkisar antara 3,18 Log CFU/mL - 4,28 Log CFU/mL dengan Jumlah mikroba tertinggi terdapat pada sampel ikan asin tanpa perlakuan (kontrol) dan jumlah mikroba terendah terdapat pada ikan asin yang disemprot dengan insektisida dari campuran serai dan kitosan hari ke-0. Hasil identifikasi bakteri coliform pada sampel kontrol tidak memenuhi standar plate count (SPC) dan ikan asin dengan perlakuan disemprot insektisida serai dan kitosan tidak terdeteksi bakteri coliform. Pada hasil pengujian warna, semakin lama penyimpanan insektisida serai dan kitosan maka warna ikan asin semakin gelap setelah disemprot insektisida yang ditunjukkan dengan rentang nilai Lightness yaitu 43,38 – 50,57.
