Abstract

Hypertension is now not only experienced by the elderly, but has been found in many productive ages, including university students. One of the factors that can affect blood pressure is diet, especially the intake of sugar, salt and fat (SSF) and one's nutritional knowledge. This study aims to determine the relationship between the level of knowledge, intake of sugar, salt, and fat (SSF) with blood pressure of Sriwijaya University students. This study used a cross-sectional design with a total of 120 respondents from the Faculty of Public Health and Faculty of Teacher Training and Education of Sriwijaya University who were selected by purposive sampling. Data were obtained by filling out a nutritional knowledge questionnaire, 2x24 hour food recall interview, and blood pressure measurement using a digital sphygmomanometer. Univariate results showed 47.5% of respondents were 20 years old, 90.8% of respondents were female, 74.2% of respondents had good nutritional knowledge, and 94.2% of respondents had normal blood pressure. The average intake of sugar from food and beverages of students in the campus canteen was 5.9 g, salt 670.75 mg, and fat 21.9 g. Bivariate analysis with the Chi-Square Test at 95% confidence level showed that there was a significant relationship between salt (P-value = 0.036) and fat (P-value = 0.004) intake with blood pressure. In contrast, there was no significant relationship between nutrition knowledge (P-value = 0.373) and sugar intake (P-value = 0.166) with blood pressure. The blood pressure of Sriwijaya University students is more influenced by salt and fat consumption than nutritional knowledge or sugar intake. Future research is recommended to expand food recall data to include all students' daily intake, including food from home and off campus, not only food and drinks purchased at the canteen.
