Abstract
The objective of this research was to determine the quality characteristics of standardized ground coffee by Indonesian National Standard, coffee with Geographical Indication certification, and non-standardized coffee. All coffees were from South Sumatra. The experiment used a Completely Randomized Design with six samples of ground coffee as treatments. The coffee samples were with the brand names Benua, Tunggu Tubang, Robusta Semendo, Robusta Empat Lawang, Cap Bintang and Tanah Puyang. Each parameters were analyzed three times as replications. The observed parameters in this research were chemical characteristics namely water content, ash content, ash alkalinity, coffee extract and caffeine content and sensory characteristics include flavor, color and taste. The results showed that the standardized and certified IG ground coffee samples which met SNI requirements were better than the non-standardized ground coffee. The ash content ranged from 4.28% to 4.81% and caffeine content ranged from 1.24% to 1.96% met the SNI of ground coffee. Water content ranged from 7.38% to 9.11% and ash alkalinity ranged from 64.04 to 83.82 mLx N.NaOH/100g did not meet the SNI of ground coffee. Hedonic test on aroma, color, and taste showed that sample IG Robusta Empat Lawang Coffee was the most preferred coffee with water content, ash content, caffeine content and extract content respectively 7.38%, 4.55%, 1.31% and 24.65%. Meanwhile, the ash alkalinity of this sample was 76.02 mLxN.NaOH/100g.
