Abstract

Penelitian dilaksanakan pada bulan Agustus sampai dengan bulan Februari 2006 di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Universitas Sriwijaya dan Laboratorium Kimia-Fisika Jurusan Teknik Kimia Politeknik Negeri Sriwijaya. Tujuan penelitian ini adalah tujuan untuk mempelajari karakteristik kaldu blok dari kepala ikan tenggiri dan ikan gabus dengan penambahan konsentrasi tapioka yang berbeda. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) yang disusun faktorial dengan dua faktor yang terdiri dari dua taraf perlakuan jenis kepala ikan yaitu ikan tenggiri (Al) dan ikan gabus (A2) dan tiga taraf untuk perlakuan konsentrasi tapioka yaitu 10% (BI), 15% (B2) dan 20% (B3). Masing-masing perlakuan diulang sebanyak tiga kali. Hasil penelitian menunjukkan bahwa jenis ikan berpengaruh nyata terhadap kadar abu, kadar protein, kadar lemak dan viskositas kaldu blok kepala ikan yang dihasilkan. Konsentrasi tapioka berpengaruh nyata terhadap kadar air, kadar abu, viskositas dan kecepatan larut kaldu blok kepala ikan yang dihasilkan. Interaksi jenis ikan dan konsentrasi tapioka berpengaruh nyata terhadap kadar abu kaldu blok kepala ikan yang dihasilkan. Kaldu blok kepala ikan yang paling disukai panelis adalah kaldu blok yang terbuat dari kepala ikan gabus dengan konsentrasi tapioca 20% (A2I)3) yang memiliki kadar air 6,92%, kadar abu 5,67%, protein 6,89%, lemak 1,05%, viskositas 2,00 cP, dan kecepatan larut 7,64 menit.
