Abstract

Gedah’s banana are cultivated more farmer in OKI district, but utilization stil for fresh banana with low economic value. Production flour from green banana can preserve , for diversification product and probably increasing value added. For producing banana flour, drying is one factor that affect quality. Drying process on banana can be conducted with oven, spray dryer and drum dryer but this method need more energy and fund. This study aimed to produce gedah’s banana flour obtained by drying in solar greenhouse effect on scale farmer. This exsperiment was conducted on Juni-August 2015 on OKI district. Solar dryer was designed from bamboo, the roof is uv plastic, the size was 3 x 2 x 1.5 meter, the floor was black zinc , three of rack. This exsperiment result show temperature this dryer without product was max 69oC. Experiment with 14 kg capacity of wetchipresultwatercontentflourwas7.92%withTPC6.2x105. Butif45kgchipwas applicated and weather is not good, the dried chip was darker and contain fungi.
