Abstract

Penelitian bertujuan untuk mengetahui pengaruh formulasi bubur buah timun suri, gula pasir, dan kelapa parut terhadap karakteristik fisik, kimia, dan organoleptic dodol. Penelitian ini dilaksanakan pada bulan Mei 2011 sampai dengan Agustus 2011 di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya. Penelitian menggunakan metode Rancangan Acak Lengkap (RAL) Non Faktorial dengan perlakuan yaitu formulasi bubur buah timun suri, gula pasir, dan kelapa parut (A) yang terdiri dari 5 taraf sehingga diperoleh 5 perlakuan. Masingmasing perlakuan diulang sebanyak 3 (tiga) kali. Parameter yang diamati meliputi rendemen, karakterisrik fisik (tekstur dan warna), karakteristik kimia (kadar air, kadar abu, kadar gula total, kadar lemak, dan kadar serat kasar), serta organoleptic dengan menggunakan uji hedonik (kesukaan) terhadap warna, aroma, tekstur dan rasa. Hasil penelitian menunjukkan bahwa formulasi bubur buah timun suri, gula pasir, dan kelapa parut berpengaruh nyata terhadap rendemen, tekstur, lightness, chrome, hue, kadar air, kadar abu dan kadar gula total. Perlakuan terbaik pada penelitian ini adalah A3 (60% bubur buah timun suri + 25% gula pasir + 15% kelapa parut) dengan nilai rendemen 45,67%, karakteristik fisik (tekstur 203,73 (gf), lightness 48,83%, chroma 6,17%, hue 91,97°, karakteristik kimia ( kadar air 23,16%, kadar abu 0,91%, kadar gula total 31,43%, kadar lemak 0,8% dan kadar serat kasar 8,85%), dan organoleptik (warna 2,96, aroma 3,04, rasa 2,92, dan tekstur 2,92).
