Abstract
This research aimed to determine The Effect of Additional of Dried Butterfly Pea Flowers (Clitorea ternatea L.) on the Physicochemical Characteristics Cascara Tea. This research used a Non-Factorial Completely Randomized Design (RAL) with six factors and the treatment was repeated 3 times. Dried butterfly pea flower cascara tea was available in tea bags with a ratio of cascara (0% (b/b), 1% (b/b), 2% (b/b), 3% (b/b), 4% (b/b), 5% (b/b)). The parameters observed included physical characteristics (color), chemical (pH, tannins test, analysis of total antioxidants, and analysis of total phenols). The results showed that the addition of dried butterfly pea flowers to cascara tea had a significant effect on color (lightness (L*), greenness (a*), yellowness (b*)), total dissolved solids, tannin compounds, antioxidant activity, and total phenols. Cascara tea with the addition of dried butterfly pea flowers 5% (w/w) was the best treatment based on the physical characteristics of the lightness (L*) 27.23, greenness (a*) -4.53, yellowness (b*) 4.45 and chemical characteristics total dissolved solids 0.83, antioxidant activity 81.25 ppm and total phenols 76.76 mg GAE/g.
