Abstract

Analog rice is a processed product shaped like rice grains and its nutritional composition can be determined using various local non-rice raw materials, such as analog rice which is rich in fiber. One of the local non-rice foods that grows in the swamp waters of South Sumatra and is not widely used is swamp taro tubers. This research aims to determine the characteristics and content of dietary fiber in the analog weight of swamp taro tubers with the addiction of Eucheuma cottonii. As a food fiber enhancher. The research was carried out using the Randomized Block Design (RBD) method by four concentration treatments of Eucheuma cottonii namely 0% (A0), 2.5% (A1), 5% (A2), and 7.5% (A3) which was repeated three times. Physical test results show that analog rice with the additions of Eucheuma cottonii has rehydration time (2-3 minutes), water absorption (160.5-162.49%), bulk density (0.66-0.61 g/ml), lightness (29.76-35.13%) , chroma (38.84-26.38%), and hue (126.63-104.5°), while the chemical test of swamp taro tuber analog rice has water content (8.02-8.82%), ash content (3.05-4.47%), fat content (8.15- 9.60%), protein content (5.77-4.53%), carbohydrate content (75.03-72.60%), and insoluble dietary fiber showed a range of 7.83%-9.98%. Based on statistical analysis, the addition of Eucheuma cottonii had a significant effect on bulk density, lightness, ash content, insoluble dietary fiber content, rice appearance, rice color and rice taste. The addition of Eucheuma cottonii 7.5% (A3) had the best physicochemical value and was the preferred rice and rice analog of the panelists. CINDY OKTAVIANA, Karakteristik Beras Analog Berbasis Tepung Umbi Talas Rawa (Cyrtosperma merkusii) Dengan Penambahan Rumput Laut Eucheuma cottonii (Dibimbing oleh SITI HANGGITA R.J) Beras analog merupakan produk olahan berbentuk seperti butiran beras dan komposisi kandungan gizinya dapat ditentukan dengan menggunakan berbagai bahan baku lokal non beras, seperti beras analog yang kaya akan serat. Salah satu pangan lokal non beras yang tumbuh di perairan rawa Sumatera Selatan dan belum banyak dimanfaatkan yaitu umbi talas rawa. Penelitian ini bertujuan untuk mengetahui karakteristik dan kandungan serat pangan pada berat analog umbi talas rawa dengan penambahan Eucheuma cottonii sebagai penambah serat pengan. Penelitian dilaksanakan dengan metode Rancangan Acak Kelompok (RAK) dengan 4 perlakuan konsentrasi, Eucheuma cottonii yaitu 0% (A0); 2,5% (A1); 5% (A2); dan 7,5% (A3) yang diulang sebanyak tiga kali. Hasil pengujian fisik menunjukkan bahwa beras analog dengan penambahan Eucheuma cottonii memiliki waktu rehidrasi (2-3 menit), daya serap air (160,5-162,49%), densitas kamba (0,66-0,61 g/ml), lightness(29,76-35,13%), chroma (38,84-26,38%), dan hue (126,63-104,5°), sedangkan pengujian kimia beras analog umbi talas rawa memiliki kadar air (8,02- 8,82%), kadar abu (3,05-4,47%), kadar lemak (8,15-9,60%), kadar protein (5,77- 4,53%), kadar karbohidrat (75,03-72,60%), dan serat pangan tidak larut air menunjukkan kisaran 7,83%-9,98%. Berdasarkan analisis statistik penambahan Eucheuma cottonii berpengaruh nyata pada densitas kamba, lightness, kadar abu, kadar serat pangan tidak larut air, kenampakan nasi, warna beras, dan rasa nasi. Penambahan Eucheuma cottonii 7,5% (A3) memiliki nilai fisikokimia terbaik dan merupakan beras dan nasi analog yang disukai panelis. Kata kunci : talas rawa, beras analog, Eucheuma cottonii, pangan fungsional, serat pangan.
