Abstract

The aim of study was to evaluate the using of liquid smoke on quality of physical salted Pegagan duck’s egg using palm oil sand midrib. The study was done at September until October 2015 in Nutrition and Animal Feed Laboratory, Agriculture Faculty of Sriwijaya University. The experimental design was Completely Randomized Design (CRD) and continued with Duncan’s Multiple Range Test (DMRT). The study consist of 5 treatments and 4 replications : R0 (salted without liquid smoke); R1 (salted using liquid smoke 2,5%); R2 (salted using liquid smoke 5,0%); R3 (salted using liquid smoke 7,5%); and R4 (salted using liquid smoke 10%). The parameters observed were egg weight lost, albumen index, yolk index and haugh unit. The result of this research show that using of liquid smoke in the preservation Pegagan duck’s egg affected significantly (P<0.05) the egg weight lost, albumen index, and haugh unit, but did not affect significantly (P>0.05) the yolk index. This research concluded that the effect liquid smoke 2,5% that the best result on the quality of physical in the salted Pegagan duck’s egg using palm oil sand midrib with percentage of egg weight lost as 2,60%, albumen index 0,087, yolk index 0,773 and haugh unit 36,78.
