Abstract
The purpose of the research was to find out the chemical content in the water, ash, protein, lipid, carbohydrates, vitamins A,C,E and the antioxidant activity of water lettuce (Pistia stratiotes). This research was conducted on January until May 2016 using laboratory analysis and the data analysis was done descriptively. The parameters observed in this research were the proximate analysis, the levels of vitamin A, C, E of fresh and dried Pistia stratiotes leaves, yield of extract crude, and the analysis of antioxidant activity by using DPPH method. The results showed that the content of water in fresh and dried Pistiastratiotes leaves were 82.35%, 14.40%, content of ash (0.89%, 22.21%), content of protein (1.13%, 14.21%), content of lipid (1.88%, 3.88%), and content of carbohydrate (13.73%, 25.29%). The average showed that the content proximate of dried Pistia stratiotes leaves high more than fresh leaves except of water. Vitamin E contained in the fresh and dried Pistia stratiotes leaves were 3.36 mg/100 g and 8.25 mg/100 g. Vitamin C contained in the fresh leaves was 0.52 mg/100 g and dried leaves was not detected in the plants, while vitamin A was not detected in both fresh and dried Pistia stratiotes leaves. The decrease of vitamin Con dried Pistia stratiotes leaves influence by drying procces while vitamin E increase by concentration procces. Extraction method with maceration terraced using three solvents with different polarity levels (n-hexane, ethyl acetate, and methanol) were used. The results showed the yield of crude extract plant of Pistia stratiotes by using methanol was 3.35%, ethyl acetate 1.12% and n-hexane 0.69%. The antioxidant of Pistia stratiotes extracts by using ethyl acetate and etil acetate solvent produced value of IC50 respectively 1138.9 ppm, 397.7 ppm and there was no activity of reduction DPPH on the extract by using solvent n-hexane. Water lettuce (Pistia stratiotes) extracts had weak antioxidant.
