Abstract
The purpose of this research was to know effect fractionation of antioxidant activities and anticholesterol from bekasam silver rasbora (Rasbora argyrotaenia) with the addition of starter Lactobacillus acidophilus. This research was conducted on October until December 2016 using laboratory analysis and the data analysis was done descriptively. The parameters observed in this research were the measurement of total lactic acid bacteria, pH measurement, lovastatin assay, antioxidant assay with DPPH method, analysis of inhibition of HMG-CoA reductase and peptide profile analysis (SDS-PAGE). The result of this study indicated that pH values bekasam Silver Rasbora around 5.66-5.96 and the rendemen by fractionate extracts were less percentage than rendemen extract of bekasam Silver Rasbora. Lovastatin from bekasam which had been added Lactobacillus acidophilus content 148.3043. The existence of antioxidant F1, F2, F3, and F4 have good synergy to increased antioxidant activity that in extract bekasam which do not fractionation having antioxidant activity 69.7568 % highest equivalent to BHT 40-50 ppm. Bekasam also contain peptide bioaktive 7.69 Kd that had a high inhibition to HMG-CoA reductase (93%).
