Abstract
RANTI SAPUTRI. Characteristics of Pumpkin Jam (Cucurbita moschata D.) with addition of skim milk and carrageenan (Supervised by: BASUNI HAMZAH and FRISKA SYAIFUL). The objective of this research was to study the characteristics of pumpkin jam (Cucurbita moschata D.) with addition of skim milk and carrageenan. The research was conducted at the Laboratory of Chemical Agricultural Products and Sensory Laboratory of Agricultural Technology department of Agriculture Faculty Sriwijaya University, Indralaya. This research was conducted in April 2018 until June 2019. This study used a Completely Randomized Factorial Design with two treatment factors repeated by three times. The first factor was the addition of skim milk (10%, 15% and 20%) and the second factor was the addition of carrageenan (0,5% and 0,75%). The parameters observed included physical characteristics (color and viscosity), chemical characteristics (moisture content, total solids and protein content) and organoleptic tests (aroma, texture, topical and flavor). The results showed that the addition of skim milk significantly affected color with the (L*, b*), water content, total dissolved solids, and organoleptic test, addition of caragenan has a significant effect on viscocity, water content, total dissolved solids, and organoleptic test A1B1 treatment was the best treatment based on organoleptic test.
