Abstract

The objective of this study was to determine the characteristics of salacca (Salacca zalacca) skin extract from the ratio of the type of solvent and the ratio of the solvent. This study used a Factorial Complete Randomized Design (RALF) with two treatment factors, namely factor A (type of solvent) which consisted of two levels of treatment and factor B (ratio of material to solvent) which consisted of three treatments. Each treatment was repeated three times. The parameters observed in this study were pH analysis, total phenol levels, and antioxidant activity. The results showed that the type of solvent and the ratio of the solvent significantly affected the pH and antioxidant activity, had no significant effect on the analysis of total phenols. Based on the antioxidant activity, the best treatment is (water solvent type with material ratio 1:10) with a characteristic pH of 3.90, a total phenol of 6.88% and a value of 502.73 ppm. In addition, snake fruit skin also observed in the water content which had a value 54,8%.
