Abstract

Elderly are vulnerable to various health problems, one of which is constipation. Constipation is the frequency of defecation less than 2 times a week with symptoms such as clumped and hard stool during defecation, uncomfortable sensations during defecation due to blockages in the rectum and straining that causes pain in the stomach. Food modification is one of the efforts to fulfill the needs of water and fiber in the elderly, this study used the combination of aloe vera and Prabumulih pineapple to make a beverage product that is rich in water, fiber and vitamins, especially vitamin C. Aloe vera is one of the plants that can overcome health problems, especially in the digestive system. This study used experimental research design by conducting organoleptic tests and nutrient content tests on selected products. The study was conducted with 4 treatments, namely 3 formulations and 1 control with a comparison of Control (100%:0%), A1 (50%:50%),A2 (25%:75%) and A3 (75%:25%). The results showed that there were differences in the level of preference of panelists to taste, color, texture and scent of juice in hedonic tests and there were differences in taste quality, color quality, texture quality and scent quality in hedonic quality test. Formulation A2 aloe vera juice and pineapple Prabumulih was the most preferred selected formulation with a moisture content of 94.8%, fiber content of 0.87gr and vitamin C content of 14.4gr
