Abstract
Tujuan penelitian ini adalah untuk mengetahui pengaruh penambahan tepung ganyong terhadap karakteristik fisik, kimia dan organoleptik mi basah. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya, Indralaya pada bulan Januari 2015 sampai April 2016. Penelitian ini menggunakan Rancangan Acak Lengkap (RALNF) non faktorial dengan lima perlakuan dan masing-masing perlakuan diulang sebanyak tiga kali. Perlakuan yang dilakukan adalah penambahan tepung ganyong yaitu Ao (100% tepung terigu), A] (90% tepung terigu : 10% tepung ganyong), A2 (80% tepung terigu : 20% tepung ganyong), A3 (70% tepung terigu : 30% tepung ganyong), A4 (60% tepung terigu : 40% ganyong). Parameter yang diamati meliputi karakteristik fisik (warna, tekstur dan persentase perpanjangan. Karakteristik kimia (kadar air, kadar abu), serta uji hedonik (warna, rasa dan aroma). Hasil penelitian menunjukkan Penambahan tepung ganyong berpengaruh nyata terhadap nilai warna (£* a* dan b*), tekstur, persentase perpanjangan dan kadar abu, serta uji hedonik terhadap warna, rasa dan aroma, sedangkan perlakuan penambahan tepung ganyong berpengaruh tidak nyata terhadap kadar air. Perlakuan terbaik diperoleh pada perlakuan Ai (90% tepung terigu 10% tepung ganyong), dengan sifat fisik yaitu (lightness 62,07%, redness 5,23, yellowness 12,17, persentase perpanjangan 39,33%, dan tekstur 5,85gf) dan sifat kimia (kadar air 70,50%, kadar abu 0,34%). Skor uji hedonik warna 3,48, rasa 3,24 dan aroma 3,48.
