Abstract

Tujuan penelitian ini adalah untuk mencegah serangan jamur sehingga mengurangi kerusakan mikrobiologis buah duku pascapanen dengan cara perendaman dalam larutan kalium sorbat. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya Indralaya. Waktu pelaksanaan dilakukan pada bulan Februari sampai bulan Maret 2009. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang disusun secara faktorial dengan dua perlakuan dan empat ulangan. Perlakuan pertama adalah konsentrasi kalium sorbat (0,1% dan 0,2%) dan perlakuan kedua adalah lama perendaman (0 menit, 2 menit, 4 menit dan 6 menit). Hasil penelitian ini menunjukkan bahwa konsentrasi kalium sorbat dapat menghambat serangan jamur dan kerusakan daging buah. Buah duku yang direndam kalium sorbat 0,2% selama 2 menit mempunyai persentase serangan jamur dan kerusakan daging buah lebih sedikit dibandingkan perlakuan lain setelah 9 hari penyimpanan.
